What Is Decaf Coffee?
Decaf coffee, short for decaffeinated coffee, is coffee that has had most of its caffeine removed. A Brief History of Decaf Coffee
Decaffeinated coffee has been around for over 100 years! In fact, the first recorded time caffeine was isolated from the coffee bean was in 1819. After receiving rare coffee beans from German poet Goethe, Friedlieb Ferdinand Runge, a German chemist, discovered the caffeine compound and was able to successfully remove caffeine from the bean and present it to Goethe in its purest form.

In the early 1900s, a German coffee merchant named Ludwig Roselius accidentally discovered that coffee beans soaked in seawater lost most of their caffeine but kept their flavor. He developed a process that involved steaming the coffee beans with various acids and bases, and then using benzene, a known carcinogen, as a solvent to remove the caffeine. As with many discoveries, this initial process proved to be hazardous, but it did mark the birth of decaf coffee as we know it today.

Since then, decaf has evolved, and decaffeination processes have improved. Methods like the Swiss, Mountain, and Royal Water Processes, allow coffee-lovers to enjoy decaf coffee that tastes just as good as regular coffee, without any chemical aftertaste or potentially deadly consequences.
How is Coffee Decaffeinated?
Decaffeinating coffee is a careful process. There have been many different methods of decaffeination over the years, some better than others.
Probably the most popular and natural method used today is Water Process Decaffeination. This method doesn’t use any chemicals—just water! Here’s how it works: essentially, the beans are soaked in water or exposed to steam in order to remove the caffeine. Then, the water is filtered to trap the caffeine and the compounds are reabsorbed, leaving the beans decaffeinated while keeping the flavor intact.
When researching water decaffeination processes, you may find yourself asking “what about Swiss Water Processing or Mountain Water Processing?” These processes are all relatively the same, with some minor differences in the filtration process and how flavor is reintroduced after decaffeination is complete. All water processes are natural and do not introduce the beans to any chemicals or foreign solvents.

Debunk The Myths
There are a few myths surrounding decaf coffee that we’d like to clear up
● Myth 1: Decaf coffee doesn’t taste as good. In the past, decaf coffee often had a reputation for being flat or weak. Coffees subjected to chemicals during the decaffeination process reportedly may have had an unpleasant aftertaste. With modern decaffeination processes like the Water Processes, however, today’s decaf coffees are just as flavorful as regular ones.
● Myth 2: Decaf is completely caffeine-free. Decaf and caffeine-free are two different classifications. Currently, it’s not possible to remove ALL of the caffeine from coffee, as trace amounts always remain after the decaffeination process. Regular coffee can contain 95-200 mg of caffeine per 8oz cup. Decaffeinated coffee generally contains around 2-5mg of the compound per 8oz cup. So while decaf coffee does have significantly less caffeine, it is not 100% caffeine-free.
